Every year there is a magnificent display of samples of different cuisines from around the world. It is the EPCOT Food and Wine Festival. There is something to please every palate as well as brews, wines, and cocktails for everyone to love.
The countries highlighted in the festival bring their best and famous dishes to be tried. In fact, there is usually a pairing with an adult beverage for you to enjoy.
There are also food demonstrations by famous chefs.
Make sure you bring an empty stomach when you attend.
However, it seems that no matter how many samples from the Festival you buy you never seem to be full. That is until you get back to your car and realize you definitely ate and drank too much but had a ton of fun.

Every year EPCOT presents a wonderful experience for gardeners and lovers of nature.
The festival has wonderful display of planting arrangements in many colors and textures as well as intricate Disney character topiaries.
It is something that must be experienced and it teaches visitors what can be done with plants to enhance your yard.

If you feel like adventure, and wish to be transported to the land where the animals live. When at WDW you need go no further than Animal Kingdom.
There you can be one with the elephants, tigers, gorillas, and birds.
You can see how magnificent they are when you have the chance to admire them up close.
And at the end of the day… Enjoy the Disney Parade with all your favorite Disney friends.

It is always fun at the Magic Kingdom. Even during different seasons, different times of the day or night, and even in the rain.
One of our favorite places is the Haunted Mansion. It seems the residents of that place get even more frisky during this time of year for Halloween.
Another favorite is Pirates of the Caribbean.
We also like everything that goes on at night too.

This week we thought we would do something a little different. This week all our posts will be about Walt Disney World or as we locals like to call it WDW. You see we live about 10 miles as the crow flies from Cinderella’s Castle at the Magic Kingdom. Every night we get to hear the fireworks go off and you almost set your watch to them. Being locals gives us a chance to go to all of the parks fairly often.
Being gardeners one of our favorite rides is Living with the Land at EPCOT. It is a ride that shows how WDW gets some of their produce by growing it right on premise.
In addition, there is a tour called Behind the Seeds that gives an even more in-depth look at all that they do for Florida agriculture and some of their unique growing techniques.

In the center of Old Town Quito is the Plaza Grande. One of the buildings there at the Plaza Grande, is the Presidential Palace. The inside of this building is open to the public by taking a tour.
The tours run about every 30 minutes and last about 30 minutes. It takes you to several of the large public rooms used for entertainment and is very informative. The picture below is the Banquet Room for large state dinners.
This is the Hall of Presidents, which has a portrait of every President of Ecuador along the walls.
Throughout the Palace are display cases which contain gifts given from foreign dignitaries to the Presidents of Ecuador.
Once you finish the tour, the Ecuadorian government says thank you by giving you a gift photo of your visit. It is a real special treat.

This morning we picked some Kale from the garden.
We love Kale salads. The reason is that you can put whatever you like on it.
Today’s Kale salad had the fresh Kale we picked as well as fresh cucumbers from the garden. We also added tomatoes, quinoa, feta cheese, olives, and a Meyer Lemon dressing (the lemon was also from the garden). The dressing was 1 part lemon, 2 parts olive oil, salt, pepper, and a dash of pomegranate molasses.

There is much natural beauty in St. Lucia. All around the island you can see nature at its best.
From the Grand Tetons,
to wonderful waterfalls.
You can even walk around in the heart of a volcano (natural sulfur pits).
In fact, St. Lucia was the location for a very famous movie scene we all know. You may remember it. During the beginning of Pirates of the Caribbean (the first movie). Jack Sparrow (Johnny Depp) is sailing into Port Royal. He looks over to the side and sees three skeleton pirates hanging from a natural arch with a sign hanging from one of the pirates neck telling Jack that “Pirates Beware!”
Of course, the best part are the beaches.

Most peoples’ vision of Key West is Sloppy Joe’s Bar and a ton of other bars along Duval Street. However, at the southern end of Duval Street is a wonderful place known as the Key West Butterfly and Nature Conservatory.
It is a great place to slow down and enjoy some time with peace, beauty, and magic.
You will be transported to a place where butterflies are friendly and will spend time on your shoulder.
The conservatory protects the butterflies and birds within from the dangers of the outside world so that we can enjoy their beauty up close and personal.
So next time you head to Key West make a date with nature, you will be well rewarded during this adventure. Enjoy the show.

Many of you who read this blog already know that we grow fruits and vegetables in our yard in Central Florida. Well this year we had a large crop of Persimmons from our one tree.
So our question of what do you do with a large crop, was one we had to face ourselves this year.
So with the Persimmons we…
- Ate them fresh as a snack
- Dried them to preserve them for later
- Shared them with friends
- And made them into a paste!!!
This is the same principle like Guava or Quince paste.
The method is simple:
To 8 cups of strained persimmons add 2 cups of sugar and a 1/4 cup of lemon juice. Cook the mixture until it thickens. Place the thickened mixture into a Pyrex cooking dish with a sheet of parchment paper on the bottom. Finish drying the mixture in the oven on the lowest temperature setting in the oven. The drying in the oven will take several hours. Dry the mixture to your liking and desired consistency.
Once you finish the drying in the oven let it cool and then you can move the Persimmon paste to the refrigerator or freezer for longer storage.
The paste is very tasty with Greek yogurt or cheese.
